🥘 Ingredients

  • 2 large Eggplants (cubed)
  • 1/2 cup Adauri (Badi)
  • 1 Potato (cubed)
  • Mustard Paste (optional but traditional)
  • Spices (Turmeric, Coriander, Chili)
  • Oil

👩‍🍳 Instructions

Fry the Adauri in oil until red/brown. Remove.

In the same oil, add spices/mustard paste.

Add potatoes and eggplant. Sauté.

Add water and the fried Adauri.

Cook until veggies and Adauri are soft. The Adauri absorbs the gravy.

💡 Cultural Significance

A classic way to use preserved Adauri during seasons when fresh vegetables might be scarce.
